2 medium zucchini, diced
2 tbsp oil
1 onion, chopped
2 cloves of garlic, minced
4 ears of corn, kernels removed
2 tomatoes, diced
fresh parsley
salt & pepper to taste

Heat oil in a large skillet. Add onion and garlic, and saute until soft. Add zucchini and corn kernels, and continue to saute. Add tomato and parsley, then saute until tender. Season to taste.

If desired, top with shredded cheese.
