1 cup uncooked whole wheat orzo
grilled veggies (one eggplant, one zucchini, one onion)
1 pint cherry tomatoes, halved
1/2 cup mini mozzarella balls, quartered
1/4 cup pesto (see the Basil Pesto recipe on the Farmer Dave’s Recipe Blog for instructions)
salt and pepper to taste

Cook orzo as directed. As it is cooking, chop up everything else. Let orzo drain and cool (I mixed in the pesto whilst warm).
