“Hi – I adapted this from a baby bok choy slaw in a recent Real Simple and use an item from Trader Joes
Summer Bok Choy Slaw (very low fat!)

  • Up to one head of bok choy , thinly sliced. I use the inside stalks fully and then some of the leafy greens as well from the outer stalks.
  • one  20 oz. can of CRUSHED pineapple in pineapple juice
  • at least 6 TABLESPOONS of “Trader Joe’s Reduced Fat Cilantro Dressing” (one WW point equals 2 TBSPS) (or use olive oil and fresh cilantro. salt and pepper to taste)

Mix ingredients together in a bowl and refrigerate until needed (even make a day ahead)”
