  • 10 Apples, medium, baking variety, such as Cortland
  • 1 Onion finely diced
  • 1 pound of Sausage, mild not breakfast
  • 2 Cups of Brown Rice, cooked


Preheat oven to 375 degrees. Core apples and set into an oven proof pan. Cook rice or use leftovers. Brown sausage in a pan over medium heat.

Next add in onion and cook for about 5 minutes. Remove from heat and stir in cooked rice. Spoon mixture into your cored apples.  Use a Popsicle stick to push filling down. If any over flows, it’s fine, just spoon it on your plate.

Serves 10 as a side or 5 as a main course. Enjoy!
