2 large tomatoes
2 medium ripe peaches; peeled, halved, and pitted
1/2 C finely chopped red onion
1/2 C finely chopped red or green bell pepper
2-3 tbsp fresh lime juice
2-3 tsp sugar
1/4 tsp salt
1/4 C cilantro; chopped


Core, seed, and finely diced tomatoes. Place them in a medium mixing bowl. Finely chop the peaches and add them to the tomatoes.

Stir the remaining ingredients into the salsa, adding the lesser amounts of lime juice and sugar at first. Wait a few minutes, then taste the salsa and add more if needed. Cover and refrigerate the salsa until serving time.

Makes about 3 cups.
