Tomato Sauce Recipe

1 large bunch garlic scapes, finely chopped 
8-10 medium sized tomatoes, diced
1 large bunch basil, chopped
4 TBS good quality olive oil
2 28 oz cans tomato purée ( I use Tuttorosso) 
Salt and pepper to taste
Crushed red pepper (optional)
1. Over medium high heat sauté garlic scapes in the olive oil for 4-6 minutes until soft and fragrant.
2. Add basil, salt and pepper.  Stir.  Cook for an additional minute.
3. Add tomatoes.  Stir.  Cook until tomatoes are mushy (about 15 minutes).
4. Add tomato purée and more salt and pepper (If needed).  Bring to a boil and stir.
5. Reduce heat to medium and cover, stirring occasionally.  Add crushed red pepper if desired.  Cook for at least 30 minutes.

Makes 3 quarts of sauce (freezes well)
