Black Bean and Corn Salad with Citrus Vinaigrette
from Nourish to Flourish

Made by Anne D for the 2014 CSA Member Appreciation Potluck

Serves 8

Ingredients:
  • 2 cans of black beans
  • 1 small red onion or green onion, peeled and minced
  • 1 ear fresh corn, kernels removed from cob
  • 1 red pepper, de-seeded and diced small
  • 1/4 cup cilantro or parsley, minced
  • juice of 1 lime
  • 2 Tablespoons red wine vinegar
  • 1 Tablespoon sugar or agave nectar (optional)
  • 1/3 cup olive oil
  • 1 teaspoon cumin
  • 1/4 teaspoon black pepper
  • sea salt
Directions:
  1. Rinse canned beans with cold water and drain.
  2. Mix corn, red onion, red pepper, cilantro and beans in a bowl.  Whisk lime juice, red wine vinegar, sweetener, olive oil, cumin, black pepper and sea salt.  Pour dressing on top of beans and veggies and marinate for 35-40 minutes (or longer).
