3 cups cantaloupe (or watermelon) small dice
1 and 1/2 cups cucumber seeded and diced small
1/2 cup of finely chopped red onion
1/2 cup chopped cilantro or parsley (mint also works well)
1 jalapeno seeds remove finely chopped (want more heat add an additional one or a serrano pepper)
The juice and zest of 2 limes (should be a least 5 tablespoonfuls of juice)
! teaspoonful of kosher salt or sea salt
1 tablespoonful of extra virgin olive oil (optional) – this is great to add if you are using the salsa over a cooked meat or fish.
Mix and let sit in the refrigerator or an hour.
This goes with everything! If you love grilled fish this is perfect for it. Play with the ingredients. Do you have peaches? Add chopped peaches. Try grilling sliced of cantaloupe or watermelon and peaches just to get a char then chop into the salsa.
