1 cantaloupe seeded and chopped

1 to 2 cucumbers (if the cantaloupe is large use 2) seeded and chopped

1/2 cup finely chopped red onion

1/3 to 2/3 cups of water.  This is for consistency- increase as needed.

Juice and zest of 2 limes

2 teaspoonfuls of salt

1/2 cup of olive oil

Blueberries and basil for garnish (optional)

Crisp panchetta for garnish (optional)

Add the cantaloupe, cucumbers, red onion, water (start with 1/2 of a cup), lime juice, lime zest and salt to the food processor.  As it is blending, drizzle in 1/2 cup of olive oil.

Chill at least 1 hour.  Serve cold.
