This is a brand new squash for Farmer Dave’s that was developed quite recently. It was a collaboration between a chef, a vegetable breeder and a seedsman and the squash is bred for its nutritional value and taste.
Preheat your oven to 375 degrees. Cut the squash in half vertically and scoop the seeds out. Rub the cut side with either olive oil or a little butter and roast cut side down on a parchment lined baking sheet. Check for tenderness in about 45-50 minutes.
The flesh when roasted is sweet and creamy, not stringy. It has incredible flavor.
I tried some plain but then the rest went into “pumpkin” pancakes with cinnamon and coriander. I will dream about these pancakes.
