Warm and Cold Salad

I love the combination of warm items on top of a cold salad.

A quick stir fry of carmelized onions, garlic, red bell pepper and slices of mei qing choi served over a salad of romaine (or any other type of lettuce), cucumbers, radish, daikon when in season and anything else you would like to add (sugar snap or snow peas are great here).  Toss and drizzle with the dressing below and top with peanuts and cilantro, parsley or mint.

This salad could easily morph into a clean out the crisper salad.

Peanut Ginger Dressing:
·4 tablespoons all-natural peanut butter
·1 lemon or lime, juiced and use zest.
·2 ½    tablespoons honey
·1 ½    tablespoons reduced sodium soy sauce
·1 ½    tablespoons rice vinegar
·1 ½     teaspoons minced garlic
·1 ½    teaspoons ginger juice
