This soup is based on the recipe from Cookie and Kate – one of our favorite blogs.  It is satisfying and tasty.  The combo of greens (kale, spinach, chard, beet greens, turnip greens etc) are tempered by cooking the greens out in broth, the addition of the sweet caramelized onions and the arborio rice which once the soup is blended gives it some thickness.  If you like it spicy, I preferred cooking the cayenne down with the onions rather than adding it at the end.  I added some chick peas to mine to boost up the protein.
