Red Wine Vinaigrette
½ cup of extra virgin olive oil
4 Tablespoonfuls of red wine vinegar
1 tablespoonful of Dijon mustard
2 cloves of garlic pasted and finely minced (crush the garlic clove with the side of your knife pasting it then mince)
1 teaspoonful of a dried Italian season mix or 1 tablespoonful of a fresh mix of parsley, oregano and thyme finely chopped.
½ teaspoonful of salt to start
¼-1/2 teaspoonful of fresh ground pepper
Whisk ingredients together or shake in a mason jar.
Delicious as is or this makes a great base recipe for other additions. Whisk in a tablespoonful or so of Greek yogurt or soft goat cheese to make it creamy. Add some finely grated parmesan for a cheesy vinaigrette. Adding a tablespoonful or two of tahini (sesame paste) and some fresh chives brings it into the Mediterranean realm. Add lemon juice for more tang or some honey for a little sweetness.
