Kale is one of the most nutritious greens out there. It can be used in recipes where it is the star of the plate (for all of you kale lovers) or used in a supporting roll of a recipe where it takes on the flavors of the dish (for those of you not as enthusiastic about kale).

Massaged Kale Salads

Some of us love the crunchy texture and strong flavor of kale and some of us don’t.

Massaging kale softens its texture as well as releasing some of the bitterness from the leaves.

1) Wash the kale and pat dry or use a salad spinner.

2) Tear or cut leaves into bite sized pieces and put in a bowl.

3) Drizzle with a tablespoonful of extra virgin olive oil and a teaspoonful of salt.

4) Massage for 1 to 2 minutes or until you notice a texture change.

This massaging can also be done with salt and lemon juice or your choice of vinegar if you prefer not to use oil.

If you are tossing your kale with a vinaigrette, letting the mixture sit together for a bit before eating will also soften the leaves some.

The flavor of the kale can also be tamed with vinaigrettes or dressings containing citrus, honey, tahini as well as cheese or other dairy.

The addition of beans, nuts, seeds and/or the sweetness of fruit is another trick which compliments the flavor nicely.

Try dried cranberries or chopped dried apricots or dates.

Fresh chopped apples, peaches or pears.
