Vegisode Veggietots
This recipe is a guideline. Each vegetable’s moisture content is variable, once shredded for finely chopped, the vegetable should be drained or pressed with paper towels to be as dry as possible.
The bread crumbs can be adjusted to alter the texture of the final mixture if needed.
Recipe:
A mix of 3 cups of shredded or finely chopped vegetables
2 eggs
1-2 cups of a shredded or grated cheese, choose a variety that is on the drier side (no fresh mozz)
1 cup of panko breadcrumbs with extra to add as needed

Mini-muffin tins
Cooking spray
Directions:
Preheat the oven to 400 degrees.
Moisture makes it difficult for the tots to crips up, make sure to blot the veggies dry.
In a large mixing bowl, combine the shredded veggies and eggs. Mix well then add the cheese and breadcrumbs. Combine until the mixture resembles wet sand. It should hold together when you squeeze it in your hand but it should not be wet. If it is too wet, add a bit more of the breadcrumbs.
Spray your mini-muffin tins well.
Scoop 1 heaping tablespoonful of the veggie mixture into each well of the tin. Press down gently, each well should be about ¾ full.
Bake for 10-15 minutes. The edges of each tot should be brown and crispy.
Once out of the oven, run a butter knife around the edges of each well while the tot is still warm. Each tot should pop right out of the well.
These tots are a great make ahead. Refrigerate what you don’t eat. These are delicious for parties and can be served at room temperature.
Veggie Combos:
Carrots, Turnip (or Kohlrabi) and Cheddar
Broccoli, Carrots, Swiss Cheese, Italian seasoning (steam the broccoli until crisp tender, chop then press dry)
Kohlrabi or Celeriac, Carrot and Provolone
Summer Squash – these are high moisture veggies. Shred the squash, salt lightly and place in a colander over a bowl. Let it drain. Squeeze dry with a paper towel. These taste great with a mix of mozzarella and a little parmesan or romano cheese, granulated garlic and Italian seasonings and chopped scallions.
Potatoes – Shred and squeeze dry. Combine with shredded cheddar, scallions and chopped bacon.
