This salsa is quicker to chop in a food processor but it can totally be done by hand. 

8-10 Radish with their stems trimmed

1 clove of garlic smashed with the back of a knife and finely minced

1 jalapeno with ribs and seeds removed – if this is too hot 1/2 of a jalapeno can be used

Juice and zest of one lime

A couple of tablespoonfuls of chopped cilantro

Salt and pepper to taste

Place the radish, garlic, jalapeno, cilantro and lime in a food processor and pulse until finely chopped.

Place in a small bowl and let sit for 10 minutes.  Taste then add salt and pepper to your desired level.  

This salsa is great on sandwiches, tacos, salads, eggs etc.
