Directions
1. To make the garlic parmesan roasted sweet potatoes: Preheat your oven to 400ºF (200ºC). Peel and cut sweet potatoes into thin slices.
2. Place the sweet potato slices in a resealable bag. Throw in the garlic, oil, butter, salt, pepper, Parmesan cheese, and Italian seasoning and shake until well coated.
3. Lightly butter a baking dish and arrange coated sweet potatoes into a spiral. Sprinkle with fresh thyme and a little parmesan if you like.

- Roasting time will depend on the thickness of your sweet potato slices: the thicker, the longer.
- You can add chili powder, Cayenne, or smoked paprika to enhance the flavors of these roasted sweet potatoes.
- Swap fresh rosemary instead of thyme if you prefer. We find fresh thyme more subtle on these baked sweet potatoes, but rosemary will work also great.
Tips for buying sweet potatoes for roasting
Look for plump potatoes that feel heavy in your hand compared to their size, and with even, spotless skin without discolorations. Store sweet potatoes in a dry, cool, dark place (like a pantry or cupboard, not the fridge) for two weeks. Our favorite sweet potatoes for roasting are the Red Garnet and Jewel varieties.
How to cut sweet potatoes for roasting
To make the best roasted sweet potatoes, we recommend you first peel the skins off the sweet potatoes for better flavor and texture.
- Trim off the ends of the sweet potato and cut a lengthwise strip using your knife or a vegetable peeler with several passes: removing a thin lengthwise strip on the bottom of the sweet potato allows you to maintain the sweet potato firmly on your cutting board for cutting.
- Holding firmly the sweet potato against the cutting board with one hand, cut the sweet potato into slices.
How long to roast the sweet potato slices
This will depend on how thin you slice the sweet potatoes. In general, the thinner the slices, the faster they cook but as we stack them in a spiral for presentation, you can plan for roasting the sweet potatoes for 35 minutes when the oven is set to 400°F (200ºC).

Delicious. I do wish you’d give a an approximate weight for the sweet potatoes as they come in much varying sizes. And maybe an approximate thickness of slices. Also, no need to waste a plastic bag. I gently mixed the sweet potatoes and other ingredients in a big mixing bowl before arranging in the baking dish One more thing, I made my own mixture of Italian seasoning as I don’t keep that one in my pantry sinceI have all the ingredients that it’s made of.

I like this recipe, did not want a traditional sweet one! I used 3 yams and more garlic! The house smells like a restaurant! I covered the yams with foil for the first 30 minutes, to be sure they would be tender, then removed the foil and let them roast a few more minutes. I served them with grilled Rib Eye steak. Heavenly!
