Choose a dark place to store your sweet potatoes. A paper bag or basket in a kitchen cabinet away from the heat of the oven.
Sweet potatoes store best a temperature between 50 and 60 degrees and should last about a month. As with Irish potatoes, exposure to heat and light can cause the potatoes to sprout.
Don’t store with onions or garlic as they will encourage your sweet potatoes to sprout sooner due to the ethylene gas the onions and garlic produce.
Any produce you are intending on storing long-term, storing them unwashed is best. The vegetables can be lightly wiped to remove any loose dirt but washing them before storage can shorten their time.
Sweet potatoes freeze well once cooked. Roast or boil chunks of sweet potatoes then mash. Let the sweet potatoes cool and package up for the freezer.
